Let’s talk soggy fries. Is there anything more disappointing than a soggy fry? Ok probably but let’s stay focused here. Sweet potato fries are so hard to get right. If they are too close together, they will just steam. The oven temperature needs to be high but not too high. They cook much faster than regular oven fries…but you have to keep an eye on them. They can easily burn. But I can guarantee, if you follow my recipe, you will have crispy sweet potato fries.

I like to serve my sweet potato fries with a spicy mayo dip. The creamy spicy mayo plays so nicely with the sweetness of the potato.

The only complaints I ever get when I make these is that I haven’t made enough! 🙂
